Flavored vinegars

Bouteille Vinaigre badiane gingembre

Did you know that flavored vinegars have been around for a long time?

Thanks to the acetic acid it naturally contains, vinegar is a fantastic flavor carrier. It thus becomes the ideal medium for revealing the full intensity of spices, herbs, or fruits. Antoine Maille, vinegar maker to King Louis XV, understood this well, already offering more than 200 flavored vinegars at the time—often used for personal grooming!

Today, we perpetuate this expertise with two methods: infusion, where plants are suspended above the vinegar, and maceration, where whole fresh fruits are steeped in it for a long period. Each recipe relies on noble ingredients and three months of patience to let the aromas fully express themselves.
The result: subtle, generous, balanced vinegars… full of character.
