Balsamic vinegar, a symbol of refinement and gastronomy, has won over our kitchens and palates over the years.

However, despite its growing popularity, it remains poorly understood by the general public, especially when it comes to artisanal-quality balsamic vinegars.

Thanks to traditional production methods and meticulous craftsmanship that we detail below, our balsamic vinegars, produced in the Languedoc region, offer a taste experience you won't find anywhere else.

Artisanal expertise

In the heart of the Languedoc vineyards, the vinegar mill is ideally located for the production of balsamic vinegar. Every year from August to October, we harvest several tens of thousands of liters of must.

Within 12 hours of harvesting, the grape must is cooked for several days to concentrate the natural sugars of the grape and to develop the deep aromas of the wine. This cooking process also prevents the onset of fermentation and concentrates the musts.

The liquid, now syrupy, is then stored in wooden barrels, where the vinegar will mature and become more complex over the years. Naturally, the longer the balsamic vinegar is aged, the denser and more aromatic it becomes. Several years are necessary to obtain a quality balsamic; therefore, patience is required to achieve a high-quality balsamic with rich and balanced flavors.

Our Granhota vinegar mill uses specific Languedoc grape varieties, which give its balsamic vinegars a unique character. The absence of additives and colorings guarantees that each bottle is a pure reflection of the grape and the artisanal production method.

Confidential just 30 years ago, balsamic vinegar now accounts for more than half of the vinegar consumed in Europe.

While it has become a true fashion phenomenon, it was historically a product of great luxury. Referred to as "black gold," this exceptional product can cost between 800 and 5,000 euros per liter! Nevertheless, the balsamics sold in supermarkets are actually industrial wine vinegars in "disguise." They contain thickeners, caramel, coloring, and other ingredients like xanthan gum. Our balsamic, however, consists essentially of concentrated, aged cooked grape must to which a little wine vinegar has been added. We add nothing else.

Produced without additives and exclusively from quality grapes, our balsamic vinegars respect both traditional manufacturing methods and the high standards of fine food lovers.
