The industrialization of vinegar makers

Until the 20th century, vinegar production was only artisanal. In all four corners of France, master vinegar makers have given its letters of nobility to wine vinegar, a pillar of French cuisine.

Then massive industrialization took place, vinegar is now made in a few hours, losing its splendor and giving way to an exacerbated acidity.

Granhota's first tests

In 2009, Laurent Faure, still a student at Ensae Paristech, decided to launch vinegar trials while keeping the taste of family vinegar. The first vinegars were enthusiastically received!

The reconversion

His desire to combine his passions for viticulture and gastronomy, his desire to return to live in the South and to do something "concrete" pushed him to change career.

To develop Granhota, Laurent Faure therefore referred to his peers and to some researchers who work on bacteria (vinegar comes from the meeting of wine and the acetobacter bacteria).

The creation

Granhota thus began its marketing in 2013 to restore the nobility of French vinegar, a condiment of gastronomic tradition.

With Languedoc wines selected for their aromatic and organoleptic structure, Laurent Faure creates balsamic vinegars that follow the traditional recipe of Modena, and wine vinegars flavored with fruits or spices.

To achieve this, he relies partly on his own vineyard.

Respect for traditions and products

The master vinegar maker works his wine vinegars according to the ancestral method, known as Orléans, the one which respects the product, nature and which should never have been abandoned.

At Granhota, vinegars do not contain any added colorings, preservatives or sulfites.
