Granhota: the art of authentic French vinegar

Based in Coursan, in the Languedoc region, Granhota is an artisanal vinegar maker founded by Laurent Faure, a passionate master vinegar maker. In his former wine cellar, he produces exceptional vinegars from Languedoc wines chosen for their character, using the Orléans method.

The Orléans method is a traditional French method of vinegar production that emerged in the 18th century in Orléans, then the historical capital of vinegar. It relies on a slow and natural fermentation of wine into vinegar, carried out at room temperature, without heating or the addition of artificial oxygen.

Not all vinegar makers follow the Orléans method, mainly because it is slow, artisanal, and costly. The natural fermentation of wine into vinegar can take several weeks to several months, whereas industrial methods allow vinegar to be obtained in 24 to 48 hours.
