The reserve is a red wine vinegar where the sourness is here counterbalanced by the sweetness and roundness brought by aging. A touch of fresh grape must will bring all its complexity to this vinegar aged for more than 3 years. This process allows the vinegar to develop complex flavors and acquire subtle notes from the wood, and to have a balanced acidity that complements its complex flavors.
